Pancakes are fun and delicious, but whether you’re on a gluten-free diet or not, who needs to make pancakes packed with refined flour and sugar when you can make these?
1 large very ripe banana
2 whole eggs
1 teaspoon of maca powder (I recommend Maca from The Maca Team!)
Mash the banana.
Beat the eggs with the maca powder.
Mix the banana into the egg and maca mixture.
Pour into a non-stick pan over medium heat; cook for a few minutes on each side and serve with fresh berries, chia pudding, granola, fruit, or anything else you’d like!
