Quick and Easy Iron and Protein: Sauteed Spinach and Parboiled Eggs with Sesame Seeds

It’s been a while since I posted a recipe, or anything at all for that matter! I’ve been blessed to be busy, but of course one must always make time for good nutrition to stoke the fires of our energy!

Here’s a quick salad I threw together this afternoon. It’s filling and packs lots of iron, antioxidants and protein for energy, recovery, detoxification and fullness. A squeeze of lemon juice helps to add some vitamin C and help your body to absorb the iron from the spinach. To further aid iron absorption, eat a citrus fruit or piece of pineapple after your meal and avoid tea until after you’ve finished eating.

You will need:

3 eggs

Olive oil

3 – 5 cloves of garlic

Half a bunch of spinach

Half a lemon

Salt to taste

1 teaspoon of sesame seeds

Method:

Heat a drizzle of olive oil in a heavy-based pan which has a lid, over a medium heat. Add finely-sliced garlic and fry until fragrant, but not yet brown. Add in spinach and cover and allow it to wilt and sweat.

For parboiled eggs, add them to a pot of water which has already come to a rolling boil and leave for four minutes. After four minutes, rinse with cold water.

Once the spinach is cooked to your liking, add a sprinkle of salt and some lemon juice. I like to serve the peeled eggs on top, so that when the soft yolks burst out of the hard-boiled egg-white, it oozes into the spinach… A spoonful of sesame seeds adds extra flavour and texture.

My favourite thing about this meal is that it serves one and can be prepared quickly and eaten on the couch without any fanfare whatsoever. Perfect snack or light meal for when you’d rather spend your time with your feet up than cooking!
